Ekmek kataifi dough has a different consistency than regular bread dough. It’s soft, elastic, and delicate, so it’s best to work with it while it’s cold to avoid tearing the strands apart. When you’re ready to shape it into the traditional roll shape, use your hands to pull off one strand of dough at a time and press them together in your palms until they stick together. Then just keep rolling the ball until you have enough for each roll or make individual balls with the same technique for smaller rolls.
